Nicolas Aquaa, the son of a Nigerian mother and a Ghanaian father, grew up in Friesland with little knowledge of the Nigerian dishes his mother cooked for him. He became a chef, worked in Michelin-starred kitchens and open-fire restaurants, yet remained deeply curious about the flavours connected to his West African roots. That curiosity led him to travel through Nigeria, Ghana and London, where bridges are being built between fine dining and West African family recipes, something Nicolas is now helping shape in the Netherlands.
Through his pop-ups, travels and stages at top restaurants, Nicolas has not only refined his culinary craft, but also deepened his understanding of the flavours passed down by his mother and grandmother. In The Jollof Club, Aquaa takes the reader on a journey through suya, puff-puff and, most importantly of all, jollof rice, while also taking them on a journey of self-discovery.
